Budapest Roll

It was my husband’s birthday a week or so ago, and we celebrated with Budapest Roll. I had never eaten it before and it did not look that appealing but it was delicious! The mandarin was a surprise element but it made such a difference, as citrus often does. Despite the name, this is a Swedish pastry. It was created by Swedish chef Ingvar Strid in 1954 and is a ‘delicious meringue hazelnut roll filled with whipped cream and mandarin oranges’ – find a delicious recipe here
